Pork Tenderloin Crusted with Walnuts and Terra Chips

Ingredients

2 tbsp (30 mL) grainy mustard
1 tbsp (15 mL) maple syrup
1 lb (500 g) pork tenderloin
1/2 tsp (2 mL) each salt and pepper
1 cup (250 mL) crushed Terra Chips, Exotic Original (about 1/2 bag)
1/4 cup (60 mL) chopped toasted walnuts
1 tbsp (15 mL) each chopped fresh chives and thyme

Directions

1. Preheat oven to 375°F (190°C).

2. Combine mustard and maple syrup. Sprinkle pork with salt and pepper. Rub mustard mixture evenly over pork.

3. Combine chips, walnuts, chives and thyme. Coat pork with chip mixture; patting to adhere.

4. Place on parchment paper–lined baking sheet. Bake for 20 to 25 minutes or until internal temperature reaches 160°F (71°C). Let pork rest for 10 minutes before slicing.

Tips

To crush chips, place them in a resealable plastic bag and crush with a rolling pin.
